No-Knead Garlic & Herb Bread
Ingredients
- 3 cups (375 g) all-purpose or bread flour
- 1¼ tsp salt
- 1 tsp instant yeast
- 1¼ cups (300 ml) warm water
- 2 tbsp olive oil
Topping
- 2 tbsp melted butter or olive oil
- 3–4 cloves garlic, minced
- 1 tbsp fresh rosemary or thyme (or 1 tsp dried)
- ½ tsp flaky salt
- Optional: ¼ cup grated Parmesan
Instructions
- Make the dough
- Mix the flour, salt, and yeast.
- Add warm water and olive oil.
- Stir until a sticky dough forms. No kneading is needed.
- First rise
- Cover the bowl and let the dough rise for 2–3 hours, or until doubled.
- Shape
- Transfer the dough to a floured surface.
- Shape into an oval or round loaf and place on parchment paper.
- Cover and let rise for another 30–45 minutes.
- Add topping
- Mix melted butter (or olive oil), garlic, herbs, and flaky salt.
- Brush generously over the loaf.
- Sprinkle Parmesan on top if using.
- Score the top with a sharp knife.
- Bake
- Preheat the oven to 450°F (230°C).
- Bake in a preheated Dutch oven with the lid on for 30 minutes.
- Remove the lid and bake another 10–15 minutes until deep golden brown.
- Cool
- Let the bread cool for at least 20 minutes before slicing.
Tips
- For an extra crispy crust, place a small pan of hot water on the bottom oven rack if you’re not using a Dutch oven.
- Add 1 cup of shredded mozzarella or cheddar to the dough for a cheesy version.
- Brush with a little extra garlic butter immediately after baking for even more flavor.
