Honey Lime Chicken and Avocado Rice Stack
Ingredients
For the chicken
2 boneless, skinless chicken breasts (or 4 chicken thighs)
2 tbsp honey
2 tbsp fresh lime juice
1 tbsp soy sauce
2 cloves garlic, minced
1 tsp chili flakes (optional)
1 tbsp olive oil
Salt and black pepper, to taste
For the rice
2 cups cooked jasmine rice
1 tbsp butter
1 tbsp chopped cilantro or parsley
Pinch of salt
For the avocado layer
2 ripe avocados, sliced
1 tbsp lime juice
Salt and pepper
Garnish
Chopped cilantro or parsley
Lime wedges
Sesame seeds (optional)
Instructions
- Marinate the chicken
Mix together:
Honey
Lime juice
Soy sauce
Garlic
Chili flakes
Olive oil
Salt and pepper
Coat the chicken and marinate for at least 30 minutes (up to 4 hours for more flavor).
- Cook the chicken
Heat a skillet or grill over medium-high heat.
Cook chicken for about 5–7 minutes per side, depending on thickness.
During the last 2 minutes, brush with any remaining marinade until it becomes sticky and caramelized.
Rest for 5 minutes, then slice. - Prepare the rice
Mix hot cooked rice with:
Butter
Chopped herbs
A pinch of salt
- Prepare the avocado
Toss avocado slices with:
Lime juice
Salt
Pepper
- Assemble the stack
Using a bowl or food ring:
Press a layer of rice into the bottom.
Add avocado slices.
Top with sliced honey-lime chicken.
Spoon any pan glaze over the chicken.
Garnish with chopped herbs and a lime wedge.
Optional Honey Lime Drizzle
For extra sauce, simmer together:
2 tbsp honey
2 tbsp lime juice
1 tbsp soy sauce
1 tsp butter
Cook for 2–3 minutes until slightly thickened, then drizzle over the stack.
