No-Knead Garlic & Herb Bread

Ingredients

  • 3 cups (375 g) all-purpose or bread flour
  • 1¼ tsp salt
  • 1 tsp instant yeast
  • 1¼ cups (300 ml) warm water
  • 2 tbsp olive oil

Topping

  • 2 tbsp melted butter or olive oil
  • 3–4 cloves garlic, minced
  • 1 tbsp fresh rosemary or thyme (or 1 tsp dried)
  • ½ tsp flaky salt
  • Optional: ¼ cup grated Parmesan

Instructions

  1. Make the dough
    • Mix the flour, salt, and yeast.
    • Add warm water and olive oil.
    • Stir until a sticky dough forms. No kneading is needed.
  2. First rise
    • Cover the bowl and let the dough rise for 2–3 hours, or until doubled.
  3. Shape
    • Transfer the dough to a floured surface.
    • Shape into an oval or round loaf and place on parchment paper.
    • Cover and let rise for another 30–45 minutes.
  4. Add topping
    • Mix melted butter (or olive oil), garlic, herbs, and flaky salt.
    • Brush generously over the loaf.
    • Sprinkle Parmesan on top if using.
    • Score the top with a sharp knife.
  5. Bake
    • Preheat the oven to 450°F (230°C).
    • Bake in a preheated Dutch oven with the lid on for 30 minutes.
    • Remove the lid and bake another 10–15 minutes until deep golden brown.
  6. Cool
    • Let the bread cool for at least 20 minutes before slicing.

Tips

  • For an extra crispy crust, place a small pan of hot water on the bottom oven rack if you’re not using a Dutch oven.
  • Add 1 cup of shredded mozzarella or cheddar to the dough for a cheesy version.
  • Brush with a little extra garlic butter immediately after baking for even more flavor.
