Creamy Garlic Parmesan Chicken & Broccoli Rice Bowl

Ingredients
For the chicken
- 2 large boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp Italian seasoning
- Salt and black pepper, to taste
For the sauce
- 2 tbsp butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 1 tsp Dijon mustard (optional)
- ½ tsp black pepper
- Salt, to taste
- 1 tbsp chopped parsley or chives
For the bowls
- 3 cups cooked white rice
- 4 cups broccoli florets
- Chopped chives or parsley for garnish
Instructions
- Cook the broccoli
- Steam or boil the broccoli for 3–4 minutes until bright green and tender-crisp.
- Drain and set aside.
- Season the chicken
- Mix paprika, garlic powder, onion powder, Italian seasoning, salt, and pepper.
- Coat the chicken evenly.
- Cook the chicken
- Heat olive oil in a skillet over medium-high heat.
- Cook chicken for 5–7 minutes per side until golden and the internal temperature reaches 165°F (74°C).
- Let rest for 5 minutes, then slice.
- Make the creamy garlic Parmesan sauce
- Melt butter in the same skillet.
- Sauté garlic for about 30 seconds.
- Stir in heavy cream and simmer for 2–3 minutes.
- Add Parmesan and whisk until smooth.
- Stir in Dijon (if using), pepper, and herbs.
- Assemble
- Divide rice among bowls.
- Add broccoli.
- Top with sliced chicken.
- Spoon the creamy Parmesan sauce over the chicken.
- Garnish with extra chives or parsley.
Optional flavor boost
Marinate the chicken for 30 minutes before cooking with:
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 2 cloves minced garlic
- 1 tsp paprika
- 1 tsp Italian seasoning
- Salt and pepper
