Melt-in-Your-Mouth Snowball Cookies
Description
These traditional Christmas snowballs, sometimes referred to as Mexican wedding cookies or Russian tea cakes, are soft, buttery, and loaded with finely chopped nuts. They simply melt in your tongue after being coated twice in powdered sugar and bring sweetness to any cookie tin or gathering.
Ingredients
- Butter: 1 cup (2 sticks) of room-temperature softened unsalted butter
- 1/2 cup powdered sugar (plus an additional cup for rolling)
- One teaspoon of vanilla essence for flavor
- 2 1/4 cups of all-purpose flour
- Nuts: 3/4 cup finely chopped walnuts or pecans
- 1/4 teaspoon of salt
Instructions
- Cream the Butter: In a large bowl, beat the softened butter, 1/2 cup of powdered sugar, and vanilla extract together until smooth and creamy.
- Add Dry Ingredients: Whisk the flour and salt together, then gradually beat them into the butter mixture until a dough forms.
- Fold in Nuts: Stir in the finely chopped pecans or walnuts until evenly distributed throughout the dough.
- Shape Balls: Scoop out tablespoon-sized portions of dough and roll them into small balls with your hands. Place them on a lined baking sheet about 1 inch apart.
- Bake: Bake at 175°C (350°F) for 12 to 15 minutes, or until the bottoms are lightly browned but the tops remain pale.
- Sugar Coat: Let them cool for 5 minutes, then roll them in powdered sugar while still warm. Allow them to cool completely, then roll them a second time in the powdered sugar for that signature snow-covered look.
