Ingredients:
• 6 oz dark or semisweet chocolate, finely chopped (180 g)
• ½ cup unsalted butter (115 g)
• 2 large eggs
• 2 large egg yolks
• ⅓ cup granulated sugar (80 g)
• 1 teaspoon vanilla extract (5 ml)
• ⅓ cup all-purpose flour (40 g)
• Pinch of salt
• Butter and unsweetened cocoa powder, for coating the ramekins
Optional molten center:
• ⅓ cup chocolate ganache or chocolate spread (80 g)
How to make it:
Preheat your oven to 425°F (220°C). Generously butter four 6-ounce ramekins and dust them with cocoa powder, tapping out the excess.
Melt the chocolate and butter together in a heatproof bowl over gently simmering water, or microwave in short bursts, stirring until smooth. Let cool slightly.
Whisk the eggs, egg yolks, sugar, and vanilla until smooth and slightly thickened.
Slowly whisk the warm chocolate mixture into the egg mixture. Add the flour and salt, then gently fold until just combined. Don’t overmix.
Divide the batter among the prepared ramekins. For an extra dramatic center, spoon a little chilled ganache or chocolate spread into the middle of each one and gently cover with batter.
Place the ramekins on a baking sheet and bake for 10–12 minutes. The edges should look set while the centers remain soft and slightly jiggly. This timing is the secret to a molten middle.
Let the cakes rest for 1 minute. Carefully run a thin knife around the edges, then invert each cake onto a serving plate.
Dust with powdered sugar and serve immediately. Add vanilla ice cream or fresh berries if you want the full restaurant-style experience.
