Ingredients
- 2-inch (5 cm) piece fresh ginger, sliced
- 1 lemon, sliced
- 6 cups (1.5 L) water
- 1–2 tablespoons honey (optional)
- Fresh mint leaves (optional)
Instructions
- Bring the water to a boil.
- Add the sliced ginger and simmer for 15–20 minutes.
- Remove from the heat and add the lemon slices. Let steep for 5 minutes.
- Strain if desired.
- Stir in honey while warm, if using.
- Serve warm or chill and serve over ice with mint.
